Penne Rosa with Grilled Chicken

Penne Rosa

On days that you want a delicious meal without the hassle, this should be your go to! My husband and I make this pasta dish all the time because of how quickly it comes together. Any pasta lovers will be sure to understand once they try it.

Ingredients

Grilled Chicken

2 lbs Chicken Breast

½ tsp Garlic Powder

¼ tsp Cayenne Pepper

½ tsp Chili Powder

Salt and Pepper to Taste

Penne Rosa

1 Box Barilla Penne Pasta

1 Jar Marinara Sauce

1 Bag Baby Spinach

3/4 Container Mushrooms, Cleaned and Sliced

1 Large Tomato, Chopped in Large chunks

1/2 cup Heavy Whipping Cream

Salt and Pepper to Taste

Toppings

Red pepper Flakes 

Shredded Parmesan Cheese

 

Directions

Start with the chicken, sanitize it based on your preferred method, I typically like to rinse it with cold water, then I rub it with half a lemon, vinegar and salt and then rinse again with cold water to remove the above ingredients

Slice each breast in half to get thinner slices that will grill better and more quickly

Season each slice with black pepper, salt, garlic powder, cayenne pepper, chili powder

Grill or cook the chicken on high heat until it is cooked to your liking and set aside to rest while you prepare the pasta

For the pasta, boil water in a large pot with a sprinkle of salt and follow the cooking instructions to cook until tender. Once the pasta is done cooking, strain it but do not rinse. Place it back in the pot

Add the mushrooms and let it cook for a couple of minutes, then add the sauce, heavy cream, spinach, tomatoes and season it to your liking. Let the mix all simmer together

Plate the pasta and slice the grilled chicken on top

Top with parmesan cheese and red pepper flakes if you like. Such an easy and delicious meal.
