Lotus Biscoff Blondies

Hop on the Cookie Butter bandwagon and make yourself these delectable blondies! It might take a bit to find Biscoff Cookies and Cookie Butter due to everyones baking obsession these days, but I guarantee once you get your hands on some, these beauties will be worth the try!


1 ¼ cups Unsalted Butter, Melted

¾ cup White Granulated Sugar

¾  cup Light Brown Sugar

3 Large Eggs

1 ½ tsp Vanilla Extract

2 ¼ cups All Purpose Flour

1 ½ cups White Chocolate Chips

½ cup Biscoff Spread

¾ cup Biscoff Cookies, Roughly Crushed 


Preheat your oven to 375 degrees F.  Line a 13×9″ pan with parchment paper.

In a bowl, add the melted butter white sugar and brown sugar and beat until smooth

Add in the eggs and vanilla and continue beating to achieve smoothness

Following this, add in the flour and beat some more until a dough is formed 

Fold in your white chocolate chips then spread the mixture into your lined pan and spread it with a rubber spatula

Melt the Biscoff spread in the microwave for 10 seconds drizzle in a zigzag pattern 

Take a knife and lightly swirl the Biscoff through the blondie dough

Sprinkle the chopped Biscoff cookies on top

Bake the Blondies in the oven for 32-37 minutes, or until a toothpick comes out clean from the center

Remove and set aside to cook down

Serve with Vanilla Ice Cream and enjoy!
