You have green smoothies and you have piña coladas. This is my take on both with a few twists to keep you filled and energized. I like this recipe for suhoor during Ramadan so you can stay in the zone all day!
¾ cup coconut milk (you can use anywhere between ½ cup to 1 cup to reach desired thickness)
½ ripe avocado
2 cups green spinach
1 cup pineapple, pre cut and frozen
½ ripe mango pre cut and frozen
1 ripe kiwi
Small piece of raw coconut (or ¼ cup shredded coconut if you do not have any raw)
1 tbsp ground chia seeds
3-4 pitted dates
¼ cup Cascadian Farm Oats and Honey Granola
½ cup blueberries, strawberries, bananas etc.
¼ cup shredded coconut
Using a high speed blender, combine all the smoothie ingredients and blend until smooth. If it is too thick, add more coconut milk (little by little) until you reach the desired thickness. For a smoothie bowl, keep the blend a little thicker by adding less milk. For a more drinkable smoothie, increase the amount of milk to liquefy it.
Pour into a bowl or cup. Sprinkle granola, shredded coconut and fruits on top and enjoy!
**Note: You can add any of your favorite fruits on top such as bananas, strawberries, raspberries, etc.
