Baked Salmon

We all know after a long day of work, you just want to be able to quickly put together a dinner and be done in 30 minutes. This salmon recipe is perfect for that! I paired it with my tabbouleh (recipe on the blog) and warmed up a bag of Wild Gardens Rice and Potato Pilaf and called it a day.

Ingredients (serves 4)

4 Pieces of Salmon

2 cloves Crushed Garlic

Juice of 1 Lemon

A Handful of Parsley Chopped

3 tbsp Olive Oil

1 tsp Black Pepper

Salt to Taste

1 Lemon Sliced for Garnish

Directions

Preheat the oven at 400 degrees F. Line a baking sheet with aluminum foil and drizzle with olive oil.

Prepare the fish by rubbing in all the ingredients listed except the slices of lemon. Once the oven preheats, place the fish in the oven without covering.

Cook for 15-20 mins until the edges begin to brown. Remove from the oven, place 2-3  lemon slices on top and place back in the oven. Broil on high for 5 minutes to get that nice crust.

Serve with salad, rice or roasted veggies and enjoy!
